10 Egg-cellent Appetizers

As a symbol of new life and rebirth the egg has become attached to Easter fare. Commonly banished to breakfast meals, eggs are an undervalued and underutilized food. This Easter, why not highlight these little protein-packed bites in an unexpected way? These are just a few ideas to jumpstart your creative juices.

  • Eggs with Soldiers: Simply boil eggs for a few minutes, slice off the top of the shell, season, and serve alongside toast strips. This simple and comfortable appetizer can even feed a crowd.
  • Breaded Eggs: Start with medium-boiled eggs then peel them, roll in flour-egg-panko crumbs, and shallow fry for a whole new egg experience.
  • Scotch Eggs: Similar to the Breaded Eggs, these filling bites are encased in sausage before breading and frying.
  • Tea Eggs: Start by cracking some hard-cooked eggs. Simmer in a soy sauce, water, star anise, black tea, and orange peel mixture. Peel and serve for an asian-inspired appetizer.
  • Arepas Benedict: Take your standard Eggs Benedict and replace the bread with corn cakes and the canadian bacon with serrano ham. Add a little cilantro to the hollandaise sauce and you’ve got a mexican-inspired twist on a classic egg dish.
  • Nicoise Deviled Eggs: Say goodbye to the traditional deviled egg with this mediterranean-inspired version. Mix the yolk from hard-cooked eggs with olive oil, tuna fish, parsley, and lemon juice then return to the halved whites. Add some olive and tomato slices to the top and you’ve got a perfect spring sampler.
  • Pickled Eggs; Whether home made with beet juice or store-bought, these colorful bites are sure to grab everyone’s attention.
  • Egg Dip: Puree some hard-cooked eggs with yogurt, mayonnaise, herbs, and spices. Serve with pita points or fresh veggies.
  • Egg and Bacon Canapes: Elevate traditional breakfast fare by cutting toast into small rounds, topping with a slice of hard-cooked egg, add a little mustard/mayonnaise mixture and some crumbled bacon for a complete breakfast in one bite.
  • Asparagus and Egg Tart: Using a classic puff pastry crust topped with an asparagus/pea mixture and finished off with some fried eggs this pizza-like baked dish can feed the whole table.
